Test Kitchen video tip: Homemade mayonnaise using an immersion blender

There's nothing quite like the flavor of fresh, homemade mayonnaise. And there's nothing like being able to whip up a batch in less than a minute. It's easy. The trick? Doing it with a blender.

Check out the video above for a quick demonstration. Try it once, and you may never go back to store-bought mayonnaise again. Check out the recipe for mayonnaise below, using either a blender or food processor. Like flavored mayonnaise? You can find variations below.

QUICK BLENDER MAYONNAISE

Total time: About 8 minutes | Makes a scant 2 cups

Note: It's important that all ingredients are at room temperature. For those concerned about salmonella, place the yolks and 1 tablespoon of water in a bowl set over a pot of simmering water. Whisk constantly until the yolks reach 160 degrees (they will thicken noticeably and lighten in color), then proceed with the recipe.

    2 egg yolks
    1 tablespoon white wine vinegar
    Generous pinch of fine sea salt
    Generous pinch of white pepper
    1 cup canola oil
    1/2 cup good-quality olive oil
    1 tablespoon lemon juice

1. Place the yolks, vinegar, 1 tablespoon water, salt and pepper in a 2-cup measuring cup or a tall beaker used for immersion blenders. Stand the immersion blender in the beaker or measuring cup, then slowly pour in the canola oil so that it settles on top of the other ingredients. (If you've heated the yolks first, allow them, along with the vinegar, salt and pepper, to settle for about 5 minutes after adding the oil so that the oil rises to the top.)

2. With the blender held against the bottom of the glass, pulse until the mixture begins to emulsify, almost immediately. Continue to pulse, turning the blender a bit, but keeping it pressed against the bottom of the container. Keep pulsing until most of the mayonnaise is emulsified, less than 1 minute, then slowly plunge the blender a bit to mix thoroughly. Spoon the mayonnaise into a medium bowl, then whisk in the olive oil and lemon juice until very well combined. Serve immediately or store tightly covered in the refrigerator for up to 2 days.

To make using a food processor:

1. In the bowl of a food processor, pulse the yolks, vinegar, 1 tablespoon water, salt and pepper until well combined.

2. Add the canola oil in a very, very slow stream until the mayonnaise thickens and all of the oil is incorporated. Spoon the mayonnaise into a medium bowl and whisk in the olive oil and lemon juice until very well combined. Serve immediately or store tightly covered in the refrigerator for up to 2 days.

Variations for flavored mayo:

Chipotle mayonnaise: Add one-fourth cup pureed canned chipotle chiles in adobo to a bowl of basic mayonnaise.

Piquillo pepper mayonnaise: Follow the basic mayonnaise recipe, substituting sherry vinegar for the white wine vinegar. Add one-fourth cup pureed piquillo peppers and a pinch of cayenne to the mayonnaise.

Saffron mayonnaise: Soak a pinch of saffron threads in 1 tablespoon of hot water for 15 minutes, then add the water and threads to the egg-yolk base in place of the plain water. Continue with the recipe for basic mayonnaise.

Tarragon-mustard mayonnaise: Add one-fourth cup finely minced fresh tarragon and one-fourth cup stone-ground mustard to the basic mayonnaise recipe.

Cilantro-lime mayonnaise: Make the basic mayonnaise, replacing the lemon juice with lime juice and adding one-fourth cup finely minced fresh cilantro to the sauce.

Cumin-caraway mayonnaise: Toast 1 tablespoon each of cumin seeds and caraway seeds in a small saucepan, then grind in a spice grinder. Add to the basic mayonnaise.

Garlic mayonnaise (aioli): Using a mortar and pestle, crush 4 garlic cloves with one-fourth teaspoon kosher salt, then add to the egg-yolk mixture. Omit the salt, and continue with the rest of the recipe for basic mayonnaise.

Mustard-caper mayonnaise: To a recipe of basic mayonnaise, add 3 tablespoons Dijon mustard, 2 tablespoons minced capers, 1 mashed anchovy and 1 tablespoon each minced fresh chervil, tarragon and parsley.

Wasabi mayonnaise: To a recipe of basic mayonnaise, add 1 tablespoon fresh or prepared wasabi (Japanese horseradish).

Each tablespoon: 95 calories; 0 protein; 0 carbohydrates; 0 fiber; 11 grams fat; 1 gram saturated fat; 13 mg. cholesterol; 8 mg. sodium

Former Astro Jeff Bagwell prices Texas-sized home at $12 million

Jeff Bagwell is taking another swing at offloading his mansion-estate in Houston.

The former Houston Astros first baseman and 1994 National League MVP has listed his home at Memorial Villages at $12 million, down from $15 million a year ago.

Modeled in a French Country style, the property features a main residence, a two-bedroom guesthouse, a saltwater pool, a detached fitness center and a gated motor court on 2.46 acres.

Entered through a grand foyer, vaulted interiors sport arched doorways, exposed beams and barrel vault brick ceilings. The 16,414 square feet of living space contains large main rooms, a gourmet country kitchen, a billiard/media room, five bedrooms and eight bathrooms.

Outdoors, a covered loggia holds an outdoor living room with a fireplace, kitchen and wet bar. Formal gardens, rolling green lawns, a putting green and a pool and spa also reside on the landscaped grounds.

Bagwell, 46, spent his entire 15-season career with the Astros, making four all-star teams. He retired in 2006 with 449 home runs and 1,529 RBIs in 2,150 career games.

Giants-Dodgers broadcast on local KDOC-TV scores ratings home run

Los Angeles finally got to see the Dodgers play baseball on TV.

Time Warner Cable simulcast Monday night's matchup between the Dodgers and rival San Francisco Giants on the independent local broadcast station KDOC-TV (Channel 56).

The broadcast on KDOC -- which is widely available to viewers in the region -- drew three times the audience of SportsNet LA, the channel owned by the Dodgers, according to preliminary overnight ratings.

The game ended in the 13th inning with the Giants beating the Dodgers, 5-2.  

Preliminary ratings showed that KDOC's telecast of Monday night's game generated a 3.47 household rating in Los Angeles, and a 6 share.

In contrast, the game on SportsNet LA mustered only a 1.12 household rating and a 2 share.

Last week Time Warner Cable took the unusual step of arranging to simulcast the Dodgers' games on KDOC this week, the final week of the regular season, because so many fans have been shut out of the TV action this year.

Only a third of the homes in the Los Angeles market have access to SportsNet LA, which is carried by Time Warner Cable. 

Other major distributors -- including DirecTV, Charter Communications and Cox Communications -- have not picked up the channel, citing its high cost. According to consulting firm SNL Kagan, Time Warner Cable has asked other distributors to pay $4.50 a month per subscriber home for the channel.

The high-stakes standoff left 70% of the Los Angeles TV market in the lurch, without access to most Dodger regular-season games. 

National programmers, including ESPN and Fox Sports, have televised some Dodger games. (ESPN plans to broadcast Tuesday night's game at Dodger Stadium between the Dodgers and Giants.)

For tens of thousands of Los Angeles viewers, Monday represented a rare opportunity to hear legendary broadcaster Vin Scully call the action.

KDOC's broadcast included promotional commercials featuring Scully, who thanked Time Warner Cable for making this week's games widely available in Los Angeles.

KDOC, based in Orange County, is owned by Ellis Communications.

Time Warner Cable will continue simulcasting games on KDOC through Sunday, when the regular season ends.

After that, cable channels Fox Sports 1 and TBS will televise the early rounds of the playoffs.

Even though it was also available on KDOC, Monday night's game drew more viewers than usual to SportsNet LA. Games this season on SportsNet LA have been averaging less than a 1.0 household rating.

The Dodgers are racing to clinch the National League West division title, with the Giants 3½ games back after Monday night's game.

Starbucks tries offering beer-flavored Dark Barrel Latte

As it kicks off pumpkin spice season, Starbucks is also trying out a beer-flavored coffee drink, the Dark Barrel Latte.

The nonalcoholic beverage includes a chocolaty, stout-flavored sauce, whipped cream and dark caramel drizzle, and it's being tested in some locations in Ohio and Florida, a Starbucks spokeswoman told the Los Angeles Times. 

People who have tried the drink seem to agree that it tastes like beer, but there's no consensus on whether it's good. People said on Twitter that it tastes "like drinking a Guinness in the early morning... So yuck," "like a beer but with espresso #notbad," like "this icky mix of molasses and almost beer taste" or "just like beer & I might be in love."

No word on when or whether it'll be offered in other markets.

The Dark Barrel Latte isn't the only thing Starbucks is testing. Ten-ounce mini Frappuccinos have appeared in Denver and Houston, and the chain plans to open an express store -- a small location with limited offerings -- in New York City next year.

Actual beer is available at several Starbucks locations, including four in the Los Angeles area, through the chain's Evenings menu.

Football: City Section still deciding on championship venue

The City Section still has not finalized a site for its championship football games on Dec. 6.

Valley College and Southwest College are the leading contenders, but Commissioner John Aguirre remains interested in the Coliseum, though he has yet to have any conversations with USC that runs the Coliseum.

Aguirre wants to have the Division I, II and III finals all played on the same day at the same site.

Football: City Section still deciding on championship venue

The City Section still has not finalized a site for its championship football games on Dec. 6.

Valley College and Southwest College are the leading contenders, but Commissioner John Aguirre remains interested in the Coliseum, though he has yet to have any conversations with USC that runs the Coliseum.

Aguirre wants to have the Division I, II and III finals all played on the same day at the same site.

USC in the NFL: Joe McKnight makes impact for Chiefs

Every Monday we will recap notable performances of former USC players in the NFL.

McKnight sighting in Kansas City

Former USC tailback Joe McKnight was a trending topic on Twitter on Sunday, with many surprised to realize that McKnight was still in the NFL.

And with running back Jamaal Charles sidelined because of an injury, McKnight was used in a big way in the Kansas City Chiefs' 34-15 victory at Miami. 

"He sure did a nice job," Chiefs Coach Andy Reid told reporters. "My hat is off to him."

McKnight had a team-best six receptions for 64 yards and two touchdowns.

"He gives us a lot of options when he's back there," Reid said about McKnight's ability to make plays out of the backfield. "That's why we kept him."

McKnight did not play last season after he was cut from the New York Jets.

He signed with the Chiefs in January.

Cassel injures foot; Bridgewater debuts

Former USC quarterback Matt Cassel suffered an injury and was carted off the field in the first quarter of the Minnesota Vikings' 20-9 loss to the New Orleans Saints at the Super Dome.

Vikings Coach Mike Zimmer told reporters after the game that Cassel had several fractured bones in his left foot.

Cassel completed five of 10 passes for 53 yards.

His injury opened the door for the debut of first-round pick Teddy Bridgewater, who Zimmer said would be the starter going forward.

He completed 12 of 20 passes for 150 yards.

No time frame was given for Cassel's return.

Breakthrough for Bush

Reggie Bush rushed 26 yards for a touchdown in the fourth quarter to seal the Detroit Lions' 19-7 victory over the Green Bay Packers.

"It came at a much-needed time," Bush told reporters after the game. "We needed to put points on the board."

Bush rushed for a game-best 61 yards and a touchdown in 12 carries. He had six receptions for 38 yards.
